Magnolia Syrup

The magnolia flower, with its creamy blooms and timeless fragrance, has captured human hearts for millennia. One of the Earth's most ancient flowering plants, magnolia traces its lineage back over 95 million years. Before bees even graced the world, magnolias had already perfected their broad, welcoming petals to entice beetles for pollination. In China, it is revered as a sacred emblem of purity and gentleness, often associated with the nurturing force of the earth and the noble spirit of womanhood. The American South, where the magnolia is a beloved icon, ties it to themes of strength under pressure and grace in adversity. In Victorian times, to present someone with a magnolia blossom was a declaration of deep respect and admiration.

Magnolia Syrup Recipe 
(Perfect for drizzling over pancakes, flavouring cocktails, or sweetening teas) 

Ingredients: 

-1 heaped cup fresh magnolia petals (from a pesticide-free source) 

-1 cup sugar 

-1 cup water 

-Juice of 1 small lemon plus a lemon slice or two (or to taste) 

Method: 

  1. Gently rinse your magnolia petals to remove any dust or tiny visitors. Pat them dry with a clean cloth or kitchen towel.

  1. In a saucepan, combine the water and sugar. Stir over medium heat until the sugar dissolves completely, forming a clear syrup.

  1. Add the magnolia petals and lemon slices to the syrup and reduce the heat to low. Let the petals steep gently, without boiling, for about 20-30 minutes. The syrup should take on a delicate floral aroma and a pale blush hue, depending on the colour of the petals.

  1. Remove from heat and stir in the lemon juice. The lemon will brighten the flavour and may intensify the colour slightly.

  2. Strain the syrup through a fine mesh sieve to remove the lemon and petals, pressing lightly to extract all the fragrant liquid. Alternatively, you can also leave the lemon and petals in. It’s totally up to you!

  3. Pour into a sterilised bottle or jar. Allow to cool before sealing. 

Store in the fridge for up to two weeks. Enjoy drizzled over yoghurt, folded into whipped cream, or stirred into sparkling water for a refreshing floral spritz.
