Coconut & Matcha Agar Agar Bites

This recipe is another refreshing, cooling recipe perfect for summertime, infused with the sweet, earthy, creamy flavours of matcha and coconut! 

Recipe:

  • 200ml coconut milk
  • 500ml water
  • 1-2 tbsp matcha powder
  • 1 tbsp agar agar powder
  • 1/3-1/2 cup of sugar (adjust to however sweet you want it)
  • 1 pinch of sea salt
  • 1 tbsp vanilla essence 

How To:

  1. Heat the water in a pan and when you start to see it simmer, add the agar agar powder. Mix thoroughly to ensure the agar agar is completely dissolved.
  2. Add in the matcha powder and lightly whisk to ensure it is all combined with no lumps.
  3. Add in the coconut milk and gently bring to a boil, stirring consistently.
  4. Now, add in the sugar, salt and vanilla essence. Keep mixing so that the sugar is completely dissolved.
  5. Allow to simmer for a further 3-4 mins, then remove from the heat.
  6. Pour into a heatproof container of your choice, or moulds, and allow to cool.
  7. Once cooled, place in the fridge and allow to set for 2+ hours.
  8. Once fully set, remove from the container and slice into cubes. Serve and enjoy!
