This recipe is another refreshing, cooling recipe perfect for summertime, infused with the sweet, earthy, creamy flavours of matcha and coconut!
Recipe:
- 200ml coconut milk
- 500ml water
- 1-2 tbsp matcha powder
- 1 tbsp agar agar powder
- 1/3-1/2 cup of sugar (adjust to however sweet you want it)
- 1 pinch of sea salt
- 1 tbsp vanilla essence
How To:
- Heat the water in a pan and when you start to see it simmer, add the agar agar powder. Mix thoroughly to ensure the agar agar is completely dissolved.
- Add in the matcha powder and lightly whisk to ensure it is all combined with no lumps.
- Add in the coconut milk and gently bring to a boil, stirring consistently.
- Now, add in the sugar, salt and vanilla essence. Keep mixing so that the sugar is completely dissolved.
- Allow to simmer for a further 3-4 mins, then remove from the heat.
- Pour into a heatproof container of your choice, or moulds, and allow to cool.
- Once cooled, place in the fridge and allow to set for 2+ hours.
- Once fully set, remove from the container and slice into cubes. Serve and enjoy!
