A cooling, sweet, custardy, jelly bite coated in delicious coconut...what's not to love about this sweet treat? This is my twist on a traditional dessert that only requires 5 ingredients!
Ingredients:
- 1/4 cup cornstarch
- 1/4 cup sugar
- 500ml milk (any of your choice)
- 1/2 cup desiccated coconut (I mixed mine with a small pinch of blue spirulina to make it a light blue colour)
- 1 pinch of blue spirulina
How To:
- Add half of the milk and all of the sugar into a pot and heat gently, stirring until all of the sugar is dissolved. Ensure the milk warms gently and doesnt simmer.
- In a separate bowl, combine the cornstarch and the rest of the milk. Add your blue spirulina to this mixture and stir until there are no lumps.
- Slowly add the cornstarch mixture to the sugar milk, stirring constantly to avoid any clumping.
- Keep stirring on a low heat. The mixture will start to thicken quite quickly.
- Stir for a further 3-4 mins until the mixture reaches a thick, glue-like consistency.
- Pour the mixture into a grease-proof lined tub, allow to cool and refrigerate for a few hours until it is fully set and cool.
- Remove from the tub, slice into cubes and coat in the desiccated coconut.
