These delicious bars are just the thing, whether in the morning, afternoon or evening! Sweet, crumbly and filling, there's nothing better than berry-infused oats.
Recipe:
- 3/4 cup all-purpose flour (or any flour of choice)
- 3/4 cup uncooked oats
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1 pinch of sea salt
- 2-3 tbsp chopped walnuts
- 1 cup of washed blueberries and blackberries
- 1/2 cup softened butter
- 1/2 tsp sweetener such as granulated sugar (or any sweetener of your choice, e.g. coconut sugar, maple syrup etc)
- 1/2 tbsp cornflour
How To:
- Preheat oven to 170 degrees celsius (fan).
- Line a small baking tray with greaseproof paper.
- In a bowl, combine the berries, the sweetener and the cornflour. Put to one side.
- In another bowl, combine the oats, brown sugar, flour, baking powder, walnuts, salt and then add the butter and combine well.
- Gently mix in the berry mixture, without being too rough and squashing all of the berries.
- Put the mixture into the baking tray and top with more berries or sugar (optional).
- Bake for 15-20 mins, until completely golden brown. Keep checking on it throughout to ensure it doesn't burn.
- Cool and cut into squares. Enjoy!
Note: You can replace the berries with any berries of your choice. I had lots of blackberries growing in the garden, so instead of the usual jam, I decided to make some oat bars with some of the leftover blueberries I had too. You can get creative and use anything from apples, raspberries, strawberries etc. Have fun!
