Blackberry & Blueberry Walnut Oat Bars

These delicious bars are just the thing, whether in the morning, afternoon or evening! Sweet, crumbly and filling, there's nothing better than berry-infused oats.

Recipe:

  • 3/4 cup all-purpose flour (or any flour of choice)
  • 3/4 cup uncooked oats
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1 pinch of sea salt
  • 2-3 tbsp chopped walnuts
  • 1 cup of washed blueberries and blackberries
  • 1/2 cup softened butter
  • 1/2 tsp sweetener such as granulated sugar (or any sweetener of your choice, e.g. coconut sugar, maple syrup etc)
  • 1/2 tbsp cornflour

How To: 

  1. Preheat oven to 170 degrees celsius (fan).
  2. Line a small baking tray with greaseproof paper.
  3. In a bowl, combine the berries, the sweetener and the cornflour. Put to one side.
  4. In another bowl, combine the oats, brown sugar, flour, baking powder, walnuts, salt and then add the butter and combine well.
  5. Gently mix in the berry mixture, without being too rough and squashing all of the berries.
  6. Put the mixture into the baking tray and top with more berries or sugar (optional).
  7. Bake for 15-20 mins, until completely golden brown. Keep checking on it throughout to ensure it doesn't burn.
  8. Cool and cut into squares. Enjoy!

Note: You can replace the berries with any berries of your choice. I had lots of blackberries growing in the garden, so instead of the usual jam, I decided to make some oat bars with some of the leftover blueberries I had too. You can get creative and use anything from apples, raspberries, strawberries etc. Have fun!
