How adorable are these tiny little apricot-filled vanilla biscuits? Soft, sweet and perfect with a cup of herbal tea…who can resist? They’re also incredibly fun to make!
Recipe:
For the Biscuit:
- 8 tbsp butter, softened at room temperature
- 1/3 cup caster sugar
- 1 tsp vanilla essence
- 1.5 cup plain flour
- 1 tbsp baking powder
- 2 tbsp milk (of your choice)
For the apricot filling:
- 2 apricots, washed & diced
- 1 tbsp sugar
- A splash of lemon juice
How To:
- In a small pan, combine the apricots, sugar and lemon juice on low heat until the sugar dissolves and the mixture starts to bubble.
- After around 5-8 mins, it should reduce and thicken to a jam-like consistency. Take off the heat and leave to cool.
- Preheat the oven to 175 degrees (fan). Mix all of the dry ingredients together.
- Add the butter to the dry ingredients, crumbling the flour into the butter with your fingers as though you’re making scones. Add the milk and vanilla essence. Kneed until the dough is soft and smooth.
- Once smooth, take small chunks of dough around the side of a tablespoon and roll in your palms to form a ball shape. Flatten the centre with your fingers and spoon a small amount of the apricot filling into it. Gently fold the edges of the dough to cover the filling and softly roll into a ball shape.
- Place on your greaseproof-lined baking tray. Once all of the dough has been shaped, place in the oven for 10-12 mins. Check throughout to ensure they do not burn.
- In two bowls add some natural food dye to some milk, one a pink-red and the other a sunset-yellow. Once the biscuits are done, allow them to cool and paint them with the milk dyes so they look like little apricots!
- Place them in the oven for a further brief 5 mins so that the milk doesn’t soften them too much.
- Remove from the oven and enjoy!
